8,000 Years of Harvests

World Heritage
The Cradle of Wine
Georgian wine history isn't measured in centuries but millennia. With over 8,000 years of history, Georgia is scientifically recognized as the original homeland of the vine. Archaeologists have discovered wine residue in ceramic fragments dating to 6,000 BC, confirming this people were the first to tame wild grapes.
At Tbilisi Restaurant, we honor this heritage by bringing you wines that aren't just beverages but time capsules. Our selection focuses on producers who keep alive the techniques that defined civilization, where earth, clay, and time work in absolute harmony to create flavors you won't find anywhere else in the world.

The Qvevri Ritual
""The Qvevri isn't just a container; it's a womb where grapes rebirth as wine, in constant dialogue with Mother Earth.""
Clay and Fire
Qvevri are hand-molded from special clay and fired in giant kilns. Their secret? An internal coating of organic beeswax.
Buried in Earth
Unlike barrels, Qvevri are buried underground (Marani). This maintains constant natural fermentation temperature year-round.
Skin Contact
Grapes ferment whole—skins, seeds, and juice. This prolonged contact gives soul, structure, and the famous amber color to our wines.
Untouched Purity
Wine clarifies naturally by gravity in the vessel's conical shape. The result is a pure, honest product with no chemical additives.
Grapes That Tell Stories

Saperavi
The quintessential "teinturier" grape. Produces intensely dark wines with notes of pomegranate, spices, and monumental tannic structure.

Rkatsiteli
Queen of orange wine. Prolonged skin contact yields notes of dried apricot, walnuts, and a rich body that defies white wine definition.
